The Big Bash?

Well it wasn't really big, but it was fun. Poor mommy can't do much so we spent a nice quiet day at home for Jamesies birthday (well maybe not too quiet). The boys helped me frost James cake in the morning and daddy was home for 15 minutes to eat and sing Happy Birthday before he headed for scouts and the boys hit the sack early. I must say the cake I made was divine. I'll post the recipe. It's pretty healthy too. It actually reminds me of a Hostess Suzy-Q. I made a yummy meringue frosting that was so yummy. Ruth's Chocolate Cake
(Here is the original recipe and my tweaks are on the side)
1 1/4 C Sugar (I use organic sugar, less of a headache for me)
2/3 C Shortening (I used applesauce instead)
2 Eggs
1 1/2 C Flour (I used 3/4 C regular, 3/4 C whole wheat)
1/2 C Cocoa
1 tsp salt
1 1/2 tsp baking soda
1/4 tsp Cream of Tarter
1 tsp Vanilla
1 C Milk (I used 1/2 C sour cream, 1/2 C silk milk)
Preheat Oven to 350 degrees. Mix everything together. Grease and flour pan, bake about 25 minutes.

Meringue Frosting

Cook over Medium High Heat until sugar dissolves and it boils:
1 C sugar (organic)
1/3 C water
1/4 tsp Cream of Tarter

Whip to stiff peaks:
2 Egg Whites
1 tsp Vanilla

When both mixtures are ready combine. Beat for a couple of minutes and then frost your cake.
